Downtown Bellevue used to hand its summer over to one lawn. If you wanted a scoop of ice cream, live music, or a decent lunch on a Tuesday, you walked to Downtown Park and stayed there.
That is no longer the map. The 2026 calendar is spread across The Eight, Lincoln Square South, the Bellevue Collection, Avenue Bellevue, and a pilot farmers market at 106th, and each of those addresses now anchors a different piece of the food scene. The useful skill this fall, if you already live here, is knowing which block is doing what.
Bellevue As A Port Of Entry
The pattern is easier to see once you look at where the openings are coming from. Seattle Met, writing in March, framed the Eastside city as the Ellis Island of Asian restaurant groups, with LeTao's first US location landing in the Bravern. Tendon Kohaku, the Singapore-based tempura chain, drew hours-long lines after opening its first US location in downtown Bellevue in 2024, and LeTao followed with imported cheesecakes arranged in the Bravern like fine jewelry. The year before those, the city hosted stateside debuts of Indian chains Farzi Café and Mavalli Tiffin Rooms, and in 2026, BA Bakehouse from China opened its first US store here.
Two more names are on the way this year. Chinese skewer shop Mama Xita BBQ is slated to open shortly, and Singapore-based Japanese restaurant Sushi Tei is arriving later this year.
If you were watching only the national chains, you would miss the actual story. The interesting activity is happening block by block, in spaces that had been dark or generic for years.
The Eight, Ground Floor
Sabine Café is the opening that most changes the walking pattern for anyone who works or lives near NE 8th.
Sabine Café, an all-day Mediterranean-inspired restaurant, opened a new location in early 2026 at The Eight, a 25-story office tower in Downtown Bellevue, marking Sabine's second location and its first expansion to the Eastside, according to Yes Parade Restaurant Group. The 3,000-square-foot space at 10666 NE 8th St. offers 50 indoor seats, private dining, and outdoor plaza seating for warmer months, with lobby seating in The Eight available for grab-and-go.
The read here is not that Bellevue got another café. It is that the Bellevue location marks Yes Parade's first expansion into the Eastside, which means the same operators behind Poquitos, Rhein Haus, and Macleod's are now paying attention to this side of the lake. Openings tend to cluster once a group crosses over.
Lincoln Square South, Second Floor
Lincoln South Food Hall has quietly become the most-changed room in downtown.
OAKBERRY has officially opened its doors in Lincoln Square South, inside Lincoln South Food Hall, marking the acai brand's first location in the Pacific Northwest, at 500 Bellevue Way Northeast, Suite 250. OAKBERRY is a global acai brand with more than 900 stores across over 40 countries, and this opening marks the company's first location in Washington State.
The context matters more than the bowl. Lincoln South Food Hall originally opened in late 2022 as a casual dining alternative within The Bellevue Collection, closed by summer 2023, and relaunched on June 28, 2023 with a nearly all-new set of restaurants including Drip Tea, Seoul Bowl, and West Coast Tacos, alongside Wonderbowl. OAKBERRY now joins a lineup that includes DOTE Coffee Bar, Drip Tea, Great State Burger, Mix Sushi Bar, Seoul Bowl, and West Coast Tacos.
That is a food hall on its second full roster in three years. If you tried it in 2022 and gave up, it is a different room now.
The Southwest Corner Of Downtown Park
Salt & Straw solved a specific problem that longtime residents will recognize: where the family walk after dinner should end.
Salt & Straw finally answered the question of where the family walk after dinner should end, with Infatuation's roundup noting that Salt & Straw continues its PNW domination with a location in Bellevue, strategically dropped in the southwest corner of Downtown Park.
Position matters here. The southwest corner is walkable from Old Bellevue, from the Meydenbauer side, and from the north edge of Downtown Park. It turns an aimless post-dinner loop into a route.
Bellevue Way And Main
Bellevue Way south of Main has been a rotation of concepts for a while. The current tenant is worth flagging because it is the first restaurant in the sequence that arrived with a clean lineage.
After Racha Go closed, Chawla Cafe opened in 2024 offering dine-in and takeout, and in 2025 Chawla Cafe was replaced by Hyderabad Biryani & Kebabs, with Shri Krishna Bhavan now the fourth restaurant to occupy the space within the past five years and the third fast-casual Indian restaurant to operate at the location during that time.
Read that sequence twice. Three Indian concepts in a row at the same corner is not a trend piece. It is a signal about lease turnover and about what demand actually looks like on that stretch. The site is part of a larger redevelopment approved by the City of Bellevue for the southeast corner of Bellevue Way SE and Main Street, which includes plans for a seven-story mixed-use residential building with 376 apartments, ground-floor retail, and underground parking. The current restaurant is a placeholder until the block is rebuilt.
A more durable Bellevue Way move happened a little north. Facing East has been serving Bellevue since 2006 in the BelRed Arts District, and the beloved family-run Taiwanese restaurant's new downtown location sits in the Brio Apartments building, with staples like pork chop rice, Taiwanese oyster pancake, five-spiced popcorn chicken with basil, beef noodle soup, and bao buns, giving a twenty-year Bellevue business a lunch-walkable address for the Brio and Bellevue Way crowd.
The Bellevue Collection, Late Summer
The biggest change on the horizon is the reopening of a room that has been quiet since early 2022.
Sushi Tei, a well-established Japanese restaurant chain with more than 50 locations across Asia, is planning to open its first U.S. location at The Bellevue Collection in September 2026, occupying a 6,290-square-foot space previously home to P.F. Chang's, which closed in January 2022, with the new venue seating approximately 200 guests. Founded in 1994, Sushi Tei is known for its focus on fresh ingredients, Japanese culinary techniques, and an open-kitchen format that showcases chef preparation as part of the dining experience.
Two hundred seats reopening on the ground floor of Bellevue Square, in September, is a meaningful change to how the mall feeds itself at dinner.
Avenue Bellevue, Rebranded
The most consequential 2026 announcement for the neighborhood is not a restaurant opening at all. It is a naming.
Luxury restaurant and hospitality brand Nobu is coming to downtown Bellevue, bringing the Pacific Northwest its first Nobu restaurant and launching the brand's first residential project in the United States, with Nobu, co-founded by Robert De Niro and Nobu Matsuhisa, rebranding the two residential towers at Avenue Bellevue as Nobu Residences. The project will also include a 10,000-square-foot Nobu restaurant slated to open in 2027.
The project marks the first completed and move-in ready Nobu-branded residential development in the United States. The residences are comprised of 365 luxury condominiums featuring expansive homes with panoramic views of Lake Washington, the Seattle skyline, and the Olympic Mountains.
Which means the anchor restaurant on that block is still a year out, but the retail base of Avenue is already being reshaped around what will eventually land there.
A Weekend Shortlist, Using Only What Is Open Now
For the next few Saturdays, a route that actually works, borrowing loosely from a plan already circulating locally:
- Morning coffee and a pastry at Sabine at The Eight, then a walk west toward Downtown Park.
- A scoop at Salt & Straw at the southwest corner of Downtown Park.
- A weeknight bowl or bao at Facing East's new Brio location on Bellevue Way.
- A late-afternoon acai stop at OAKBERRY on the second floor of Lincoln Square South, if you are already shopping the Collection.

There is a reason global groups keep choosing this specific downtown. Bellevue's population is wealthy, worldly, and heavily Asian, which makes for an appealing demographic mix for big-name restaurant chains from across the Pacific looking to plant a flagship in the US market. "Bellevue has really emerged as a global destination for business and luxury entertainment," Silverstein's Shawn Katz told the Business Journal when the Nobu partnership was announced.
The takeaway for people who already live here is smaller and more practical. The old habit of defaulting to a single block for dinner is out of date. The Eight, Lincoln Square South, the southwest corner of Downtown Park, the Brio building on Bellevue Way, and the Bellevue Collection are each running their own program this fall, and the calendar rewards a resident who moves between them.
